After many years of practicing law in the great State of Texas, Dave Eagle woke up one day and realized it was time for a change. This realization was the beginning of Dave's journey down "a road less traveled" which led Dave down the path of artisan cheese making, the local food movement and the idea of terroir.
Avid cheese-lovers with an affinity for the specialty regional cheeses that are made in different parts of the world, especially in western Europe, the cheese makers at Eagle Mountain Farmhouse Cheese Co. are currently making their Texas versions of some of these traditional cheeses, along with a few original cheeses from right here in the Lone Star State.
Now, Dave Eagle, along with his son, Matt and his nephew, Corey, offer you some of the finest hand made cheeses found anywhere in the world. No brag, just fact.
